How to Grill Pizza

Homemade, grilled pizza is the perfect option for those of us not lucky enough to have a wood burning brick oven in the back yard. Start with a homemade pizza dough, not too thin, and in about thirty minutes you'll have a pie that tastes as good, or better, than any pizza parlor in town. The fire roasted flavor is fabulous. Before you know it, your backyard will be the favorite pizzeria in town. Best of all, you can enjoy homemade pizzas in the summertime without heating up your oven and your home.
What You Will Need
- Grill with cover
- pizza dough
- pizza toppings
- pizza peel or two large spatulas
- pizza pan or stone
- cornmeal or flour
Directions
- Build the fire. If you are using charcoal or wood, let it burn down to ash and coals. Gas grills should be turned to high.
- Roll out your homemade or store bought pizza dough to the size of your pizza pan or stone.
- Flour the pizza peel, or use cornmeal. Slide the peel under the dough, and then slide onto the grill. (Do not leave the pizza peel on the grill.)
- Cook the dough over the fire until it begins to turn golden, popping any gas bubbles that form with the edge of your spatula or a knife.
- Using the peel, remove the dough from the grill, and flip it over, and place cooked side up on a floured work surface.
- Add the toppings the cooked side of your pizza crust. Go easy on the toppings and the sauce. For really great flavor, try a smoked mozzarella cheese.
- Slide the peel under the pizza, return it to the grill, and close the lid immediately. Cook until the cheese is melted. Remove from the grill, place on a pizza pan or stone, cut and serve.

Quick and Easy Pizza Sauce
1 - 14.5 ounce can tomato sauce
1 - 6 ounce can tomato paste
1 clove crushed garlic
1 teaspoon dried oregano.
Simmer ingredients over low heat until flavors blend, and oregano has re-hydrated. Spread over pizza dough and finish off with your favorite toppings.
